In the world of baking, achieving the perfect bundt cake can be a delightful challenge, but with the right techniques, it’s possible to create a citrus-infused masterpiece. This lime and yogurt bundt cake combines the fresh zest of limes with a tender crumb, thanks to the harmonious blend of butter and yogurt. To ensure a flawless release from the intricately designed bundt tin, a homemade cake-release mixture, aptly called Cake-Release Goop, is prepared using equal parts of plain flour, vegetable oil, and softened unsalted butter.
This cake-making journey begins with preheating the oven to 170C, or 150C with a fan, and preparing the bundt tin by brushing it thoroughly with the cake-release mixture. The batter starts with finely grated lime zest rubbed into caster sugar to release aromatic oils. This lime-infused sugar is then creamed with softened butter in a stand mixer until pale and fluffy. Warmed and lightly whisked eggs are gradually incorporated into the mix, followed by a careful addition of a blend of soft plain flour, baking powder, and fine sea salt.
Once the batter is smooth and streak-free, it is transferred to the prepared bundt tin, smoothed on top, and baked for 60 to 70 minutes. The cake is ready when it has a golden crust, and a skewer inserted into its center comes out clean, ideally reaching an internal temperature of 95C. While the cake bakes, a tangy lime syrup is prepared by whisking icing sugar with freshly squeezed lime juice until smooth, which will later soak into the warm cake to enhance its flavor.
After baking, the cake is pierced with a metal skewer to create small holes, allowing the lime syrup to penetrate the crumb deeply. Half of the syrup is spooned over the warm cake before it is left to rest for ten minutes. The cake is then carefully inverted onto a serving plate, where additional holes are made to absorb more syrup, ensuring each slice is moist and flavorful. A final brushing of syrup is optional for those who prefer more citrusy intensity.
The finished cake, with its vibrant lime notes and tender texture, can be stored at room temperature for up to three days, making it a delightful treat for any occasion. For longer preservation, it can be frozen for up to three months, allowing its bright, refreshing flavor to be enjoyed at a later time.
